Grape sugar – available only in liquid form – is a natural product obtained from grape must through purification. Composed mainly of fructose and glucose, it is ideal for creating excellent gelato, to which it adds smoothness and a silky texture. Comprital grape sugar has a concentration of approximately 65° Brix, with a slightly fruity, non-intrusive aroma.
